Carl Sawatsky is the founder and chef behind Kraken Pizza, an artisanal pizza concept based in Cape Breton, Nova Scotia. With over 20 years of culinary experience and Red Seal certification, Carl has built his career around creating high-quality, thoughtfully crafted food rooted in technique and consistency.
From leading kitchens and opening restaurants to developing menus and managing large-scale operations, his background spans everything from brewpubs to catering and culinary education. Kraken Pizza is the result of that experience distilled into a focused pursuit: exceptional pizza made without shortcuts.
Built on a foundation of long-fermented dough, premium ingredients, and a commitment to craft, Kraken Pizza reflects Carl’s belief that great food comes from patience, precision, and respect for the process.

Vision
Kraken Pizza was created as a focused expression of everything Carl has learned throughout his career. It’s not about doing everything; it’s about doing one thing exceptionally well.
Named after the legendary sea creature said to rise from the depths with immense power and precision, Kraken Pizza reflects that same philosophy. Nothing rushed, nothing careless. Its something built patiently below the surface, then executed with impact.
At the core of the brand is a commitment to process and quality. The dough is built using a long fermentation method that takes a minimum of 48 hours, ensuring depth of flavour, structure, and digestibility. Like the Kraken itself, it takes time to develop, but when it’s ready, it delivers.
Every decision, from ingredients to execution is made with intention, with no shortcuts taken.
What started as a small pop-up has quickly built a strong following across Cape Breton, driven by word of mouth and a clear dedication to consistency and craft.
